File this sweet treat under YUM!

There are certain party treats I grew up knowing to keep a distance from: 7 layer dip, peanut butter blossom cookies (obviously) and muddy buddies, to name a few. The tempting little bits of muddy buddies had peanut butter hidden underneath their coats of powered sugar.

Insert the amazingness of Almond Butter – I may be late to the game, but whatevs! Behold ALMOND BUTTER Muddy Buddies (also dairy & soy free)! YAY!

Growing up I didn’t have almond butter and honestly I don’t know if it even existed. It probably did, but I surely didn’t know about it nor did my mom & dad. It would have been a game changer AND would have made things easier as a kid – like school lunches for example. I used to get a lot of “Ewww what are you eating?!” while enjoying my made with love from mom jelly and cheese sandwiches (obvi I could still eat dairy then). And, no it wasn’t just cream cheese, but slices of cheese most times. They were good, really good in my opinion…seriously, don’t knock it ’til you try it people. 😉  Anyways, my point is learning to make things allergy friendly for myself with the use of almond butter and other food items has been a fun journey and often includes treats that I wished I could have enjoyed with all the other kids.

ALMOND BUTTER MUDDY BUDDIES (dairy, soy and peanut FREE)

  • 8 cups Chex cereal (I used rice)
  • 1 cup Enjoy Life chocolate chips
  • 1/2 cup Almond Butter (my fave is Barney Butter)
  • 1/4 cup Earth Balance Coconut Spread
  • 1 teaspoon vanilla extract
  • 1 1/2 cup powdered sugar

Pour cereal into large bowl or onto a cookie sheet; set aside. In 1-quart, microwave-safe bowl combine chocolate chips, almond butter and coconut spread. Microwave the combination for 1 to 1 1/2 minutes, stir to fully combine until smooth. Stir in vanilla. Pour chocolate sauce slowly over cereal, stirring to coat evenly. Pour cereal into large plastic bag. Add powdered sugar and secure; shake to coat well. I did this step in parts to make sure it would all be coated well. Spread on a new cookie sheet to cool.
